Smorgasbord Committees
Bake Sale/Bazaar Committee
This committee is organizes the arts/crafts and bake sale foods (such as
pies, cakes, candies, breads, etc.) that are donated by parishioners.
Committee members set-up the room, arrange and price food items and crafts, and
work the day of the dinner.
Ticket Committee
This committee arranges for the tickets to be printed and distributes them to
the parish. In addition, members arrange for workers at the door and to
collect the tickets as people arrive. The chairperson keeps track of
ticket pre-sales.
Salad Committee
Members of this committee order produce for salads, gets the workroom ready
and prepares the salad dishes on the menu.
Pantry
This committee got its name because the workers arrange the meats in the
kitchen "pantry area." They work the day of the dinner arranging
the turkey/ham on serving platters for the head table.
Hall Set-Up
Members are responsible for setting tables/chairs for the dining room as well
as setting up the Smorgasbord "head table."
Bread Committee
Bread is an integral part of our community! This committee arranges for
workers to prepare the breads that are served at the dinner.
Dessert
Depending on the menu, this committee prepares the desserts for serving on
the day of the dinner.
Publicity
This group gets the Smorgasbord word out to the community plus provides
internal promos for the parish.
Food Donation
If you enjoy talking on the phone, this is for you! This committee is
responsible for contacting the parishioners for foods to be donated for the
dinner. They make sure all foods are in the pantry when needed, purchase
food "in between shifts" as needed, exchange food items as needed,
etc.
Decorations
Working with the Smorgasbord Chairperson, this committee helps decide colors,
table decorations, and head table decorations to make the hall look festive.
Beverage
This committee is responsible for making the coffee and tea during the dinner
shifts as well as cleaning the "big" coffee pot during the week of the
dinner.
Tart
This group "makes and bakes" the pastry shells (1200+) for our
dessert.
Meatball
This committee prepares the Swedish Meatballs for the dinner.
They get to mix "all the ingredients"; and, with the help of many
"rollers", make the meatballs, cook, and then freeze them until the
day before the dinner.
Meat Carvers
This group comes on Saturday morning to "carve" the meats and place
in lined boxes to be stored on the refrigerated truck until ready to serve at
the dinner.
Kitchen
This committee has one of the "biggest" jobs--cooking the
foods that are served at the dinner. They begin early Sunday morning (and
sometimes late Saturday evening) to prepare the food for the dinner.
Deviled Egg
When we took this item off the menu, we almost had a rebellion! This
committee is back deviling eggs for the dinner.
Dishwashing
We couldn't get along without this group of people. They keep the
silverware, pots and pans, and serving dishes ready for use! They are
needed throughout the day as well as after the evening shift has ended.
Dressing
These people make all the preparations for the dressing that is served with
the dinner. Some of the work is done ahead of tie and then the dressing is
cooked the day of the dinner. If needed, more "batches" are made
during the dinner shifts.
Broccoli Casserole
This is one dish that is not "brought in" form home kitchens.
Members prepare this dish. The casseroles needed for the first dinner
shift are prepared the night before; the casseroles for the evening shift are
prepared at the break.
Curried Fruit
This is another dish prepared in St. Joseph's kitchen. The first
shift's casseroles are prepared the afternoon/evening before, and then again
between shifts for the evening shift.
Dining Room
This committee "sets the tables" the day before the dinner,
"waits" on our guests, clears and re-sets the place settings.
Between shifts, members get the tables ready for the evening shift.
Head Table
Arranging for workers/servers, setting the serving table, and greeting our
guests as they come through the buffet line are some of the things that this
committee does.
Carry-Out
The committee assists with our guests who want to "take home" their
dinner.
Pre Kitchen Clean-Up
This committee is responsible for a total clean-up of the kitchen before the
dinner preparations begin. Everything from dishes, to appliances, to
cabinets, are cleaned.
Post Kitchen Clean-Up
"After the party is over," this committee makes sure that
everything is clean and back in place.
